Cooking for Health

Today I have made two excellent soups by my hero Isa Chandra Moskowitz from her blog The PPK.  I made these as they were quick, easy, will be easy to take to work and seemed to be very much about comfort - without heaps of guilty conscience, such as animal suffering by way of dairy or meat, or fats and grease.

Firstly the easiest soup I have ever made, Roast Potato and Fennel Soup.  I halved the recipe and it was a great amount for 2 people plus a leftover dish in the fridge (to be pedantic then it was the perfect amount for 3!)

Secondly another easy soup, only slightly more effort than the above, Alphabet Soup.  This serves 4 ( it makes 4 HUGE servings) and has a lovely mix of light tomato flavour and hearty potato and pasta.

PLEASE if you are on a calorie controlled diet DO NOT take my word for it, but I fed approximate amounts into "my fitness pal" and the roast potato soup as I made it (with extra soy milk for creaminess) was approximately 1050 calories and 5.8g saturated fat for the whole pot.  Again, approximate values, please check for yourselves, but the Alphabet Soup was approximately 1030 calories and 2.4g saturated fat for the whole pot.
